Mice have two alarms in their nose. Peppermint only rings one.
A mouse's nose runs two separate warning systems: smell, which tells it what's around, and a burn alarm (TRPA1, nicknamed the "wasabi receptor") that tells it to get out. Peppermint mostly rings the smell alarm, and its bite fades as the oil thins out. That's why peppermint on its own tends to work for about a week.
